Whiskey Barrel Aged Cider
This is a fabulous Cider!
We were only experimenting with Bourbon whiskey barrels from a Dublin Distillery. I added the pure Dry Legacy Cider to the barrel in February and left it work away. Three months later I tasted it has transformed from a dry acidic cider to a beautifully rounded flavoured cider with layers of vanilla, tobacco and soft smoked notes subtlety blended into a rich fully bodied cider.
I must say this has been a beautiful surprise!
