    La Petite Clem is a superb dry natural sparkling apple wine. Unsweetened, unfiltered and unpasteurised with only 43 calories per 100ml. It is made from a the best selected single blend of Elstar apples in our cidery.

    With a dry profile and a similar carbonation of small bubbles to that of champagne, this is a great low alcohol alternative to your Cavas, Proseccos and Champagnes, and it’s Irish!
    The delicate mineral and pear profile is great with fish and white meat. A lovely mid week, drinks reception or picnic wine.

    This was the first cider I made back in the autumn of 2015.
    It was launched on the market in April 2016.

     A very exciting time for me! This is blended with 4 different apple varieties from fresh pressed apples. It is a blend of Bramley, Elstar, Dabinette and Michellin. The Bramley gives the acidic backbone to this cider, the Elstar gives the signature flavour, the Dabinette is for the tannic balance which softenes the acidicy and balances the flavour. Michellin gives the smoothness, almost like a vanilla flavour.

    A classic dry (tannic) cider. No sweetness at all added.
    Just the cider and the wood.

    Made with a single variety Dabinette apple and matured for 18 months in bourbon whiskey barrels. Very different to our ‘Dry Cider’ below as this is a tannic dry, (more akin to a red wine) The vanilla from the barrel brings in a perception of sweetness and the whiskey notes are prominent.

    • Legacy Dry is a lovely balanced cider with an acidic dryness, something similar to a white wine
    • Legacy Medium is a sweet red apple taste, an easy drinking cider with a sweet lush rich red apple flavor.
    • Barrel Aged is a tannic Dry Cider with slight bitter notes. From a single variety Dabinette apple aged in a bourbon barrel for 12 months. Nothing added, just the apple and the barrel  It is unusual to get a cider as dry as this so if you are a fan of a dry tannic cider, this is the one!
